Adaptogenic Energy Balls (Vegan)

From Boketto Acupuncturist Nic Pitts' pantry to yours. Her Date Energy Balls are (not too) sweet, easy to make and include ingredients that support your sense of wellness. The spices are warming and tonifying, especially for the colder months. To make, all you need is a food processor and 5 ingredients at minimum, but we recommend you use all 9 listed. Feel free to substitute powders and spices to your liking. Just keep the ratios the same. 


Adaptogenic Energy Balls

Basic Ingredients
1/2 cup cashews
1/2 cup coconut flakes
16 pitted organic Medjool dates
1/2 tsp of each: ginger, nutmeg, cinnamon, clove
1/4 tsp salt

Magic Ingredients
2 tbsp raw cacao
1 tsp Shilajit Powder
1/2 tsp Bulgarian Rose Water
2 tsp Wadaman Black Sesame Paste

 

Process the cashews, coconut flakes in a food processor on pulse until coarse, then add the dates, salt, and spices, "magic" ingredients and process again. You don’t want to over-process this mixture. If you process the cashews too long, they will release their natural oils and create a greasy result. As soon as the dough looks crumbly but sticks together when pressed between your fingers, stop processing the mixture and roll it into 1" balls.

Stores nicely in refrigerator for up to a week.
